The cherimoya tastes like pineapple, mango and banana all at once, with undertones of papaya and strawberry. Mark Twain called it “the most delicious fruit known to men.” The harvest lasts from January to June and the fruit can cost up to $10 a pound. Most foodies scoop the custard-like white flesh out with a spoon, but chefs in Mexico add drops of lime juice for a tangier flavor. But be sure to avoid the seeds—when crushed, they’re used as an insecticide.
