While Lower East Side locals have been turning up at Melissa O’Donnell’s new spot, Salt Bar, for the young chef’s haute home-style cooking, they’re staying for the cocktails. Greg Seider works wonders behind the bar on Clinton Street, doing a "yin-yang thing," says O’Donnell, shopping daily for fresh ingredients to spike his fabulously deadly concoctions. Take, for example, Seider’s Raspberry Chamomile Martini. Here, the wicked recipe:

2 oz. Absolut Mandarin vodka

1 oz. chilled chamomile tea

2 tbs. fresh raspberry puree

2 tbs. fresh lime juice.

Shake the ingredients together and garnish with dried plum.
