CAVE IN
An LED sign greets patrons at the entrance to the Wynn Hotel’s newest restaurant, La Cave, reading “In vino veritas.”

Whether it’s an outrageously priced Harlan Estate Bordeaux blend from Napa Valley ($1,200 a bottle) or an affordable South African Shiraz, sommelier Rober Wright has something for anything on the modern American menu.

Standouts from executive chef William DeMarco include roasted beets with whipped goat cheese and pistachios ($8) and Angus mini burgers with mushroom and chipotle mayo ($12).

The luxe wine-cellar vibe is accentuated by oak flooring, low yet vaulted ceilings and plenty of dark corners for late-night revelry.
