TO EAT: Lievito Madre Al Duomo
Four hundred pizzas a day, then basta! At Milan’s new pizzeria Lievito Madre al Duomo, the focus is on quality ingredients and natural leavening. And they cap the servings at 400 pies.
Seven is the magic number here, with just seven types of pizza, seven red wines, seven white wines, seven homemade desserts and seven liqueurs. The selection changes with the seasons, and ingredients are all harvested in Italy. Owner Gino Sorbillo, who also operates a renowned pizzeria in the center of Naples, has vetoed automatic mixers, so all dough is mixed strictly by hand.
