COCKTAIL RECIPE: SPEZIA

For those who dare to wield squid ink water behind the bar, a recipe. The Spezia, a cloudy concoction, tastes much like a martini (stiff, crisp and clean) with a mild briny kick:

Ingredients:
3 oz. vodka
1/2 oz. squid ink water
1/4 oz. martini bianco
1/2 oz. house-made caper brine
 
Directions:

Put in shaker with ice and shake well. Pour in martini glass. Garnish with Sicilian caper berry.
